When you travel to Costa Rica, and go for your first breakfast, one of the first surprises you get is the fact that they are giving you rice and beans for breakfast.
For those used to cereal, pancakes or eggs and bread it’s a bit awkward… to say the least… Although, once you try it the first time, it is hard not to go for a second or a third time.
Me particularly, I like it with a bit of sour cream and corn tortillas…
Ingredients
1 cup cooked rice
1 cup cooked red or black beans with a cup of their sauce
3 tablespoons red bell peppers, chopped
3 tablespoons onion, chopped
1/2 tablespoon garlic, chopped
2 tablespoons cilantro, chopped
1 teaspoon vegetable oil (I do it with a bit of butter)
1 teaspoon of Lizano sauce (Can be found in Costa Rica… or in Amazon…)
If you desire, you may add one of the following ingredients:
3 slices of bacon, minced
Directions
- Lightly fry the onion, garlic, bell pepper, and cilantro in 1 tsp of oil or butter. (If you do it with bacon, use the bacon fat)
- When they are sauted add the beans in their sauce with the Lizano sauce, cover it and let it rest for a while (10-15 mins).
- Add the rice and fry all ingredients together; allow flavors to mix.
- let all the sauce to dry and it is ready!
Extras:
A variation of Gallo Pinto is the Caribbean “Rice and beans” (In English originally) that is cooked with coconut milk (Instead or with the beans sauce).
